Content

3 tablespoons coconut oil
1 teaspoon black mustard seeds
Urid washed dhal lentils 1 tablespoon (optional)
2 onions, finely chopped
3 garlic cloves, finely chopped
1 inch piece ginger grated
5 Green (remove seeds if you do not like heat), finely chopped chilli
20 fresh curry leaves
100g fresh coconut
900g very fresh spinach leaves washed and chopped
2 large potatoes cut into small cubes
100g (1 cup) fresh grated coconut

Heat a large heavy saucepan over medium heat the coconut oil. Throw in black mustard seeds and wait for them to pop.

Now urid add lentils and about a minute and fry curry leaves.

Before you can add your chopped onions and green peppers and garlic and ginger fry for a minute the throw.

About five minutes add the cubed potatoes and fry until they are about half cooked. A little vegetable oil to prevent them sticking may need to add.

Now add chopped spinach and grated coconut. Cover until spinach is wilted cook for about three minutes. Do not over cook it.

Until most of liquid has evaporated and Remove lid and cook for 3 to 5 minutes.

Season with salt and pepper to taste.
